Grilled Pineapple with Granola Topping
Ingredients1 tablespoon balsamic vinegar4 slices pineapple, fresh or canned2 tablespoons honey2 tablespoons reduced-fat soft margarine with no trans fat¼ cup granola, crumbled in a baggie1 ounce toasted, then chopped pecans1 small scoop light vanilla ice cream per serving, optionalDirectionsHeat grill pan coated with nonstick cooking spray over medium-high heat. Brush the vinegar over both sides of the pineapple slices. Cook for a few minutes on each side until just tender.Place honey and margarine in small bowl and microwave on HIGH for 30 seconds or until margarine is almost melted. Place pineapple in serving bowl. Spoon honey mixture evenly over all. Sprinkle with granola topping and pecans. Spoon small scoop ice cream on each slice, if desired. Makes 4 servings.
