Fresh Spinach and Whole-Grain Pasta Salad
Ingredients1 cup water¾ -1 cup whole wheat dry pasta, such as pasta1 cup baby spinach leaves, packed1 (15-ounce) can white beans, rinsed and drained1 small can ripe olives, drained and cut on half1 tablespoon dried oregano leaves1 ½ teaspoons dried basil leaves1/8 teaspoon dried red pepper flakes3 tablespoons olive oil3 tablespoons cider vinegar½ cup sun-dried tomato and basil feta cheese, crumbledDirections
- Bring water to boil in saucepan, and add pasta. Cook according to package directions; drain and rinse under running water.
- Combine herbs, oil and vinegar in a large bowl with a whisk. Stir in pasta, spinach, beans and olives.
- Add cheese and toss together gently to blend flavors. Makes 4 servings.
