Fish Fillets with Broccoli and Tomatoes
2 tablespoons olive oil
2 cups chopped fresh broccoli
2½ cups diced fresh tomatoes
2 tablespoons lemon juice
1 tablespoon chopped garlic
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
½ teaspoon sugar
½ teaspoon black pepper
4 (4-ounce) white fish fillets
1. Heat oil in large skillet over medium heat. Add broccoli and stir 5 minutes. Add tomatoes, lemon juice, garlic, tarragon, sugar and pepper; cook and stir 5 minutes.
2.Add fish; cover and cook 5-8 minutes or until fish is opaque and begins to flake when tested with fork.
3. Divide vegetables evenly among 4 plates; top with halibut. Serve with lemon wedges. Makes 4 servings.
