Makes 6 servings.
- Heat 1 tablespoon olive oil in large skillet. Add 1 medium diced onion and sauté until softened.
- Add crumbled 1 lb. ground turkey and brown.
- Add 2 cups frozen vegetables, 1 (14 ½ -ounce) can diced tomatoes in tomato sauce, 2 cups reduced-sodium chicken broth, 1 teaspoon dried basil and 1 teaspoon minced garlic. Stir to combine and bring to a boil.
- Add 2½ cups uncooked multi-grain noodles of choice. Cook for 15 minutes or until liquid is absorbed and vegetable are tender. Add black pepper to taste.
