Ingredients1¼ cups crushed corn flakes¼ cup Parmesan cheese2 tablespoons green onions, green parts only1/8 teaspoon black pepper1 lemon¼ cup egg substitute4 ounces haddock fillets (or other white fish)DirectionsPreheat oven to 400 degrees. Line baking sheet with parchment paper; set aside.Combine corn flakes, cheese, green onions and pepper on a plate. Grate lemon peel; stir into corn flake mixture. Reserve the lemon. Pour egg substitute into a shallow bowl.Dip fish fillets into egg substitute, then into corn flake mixture; coat well on both sides. Place coated fillets on prepared baking sheet. Bake 10 minutes or until cooked through. Cut reserve lemon into wedges; garnish fish with lemon wedge. Makes 4 servings.
