Chocolate Peanut Butter Drops
Ingredients½ cup chunky peanut butter (or other nut butter)3 tablespoons sugar or sugar substitute1 cup crisp gluten-free rice cereal3 tablespoons unsweetened cocoa powder¼ cup mini semisweet chocolate chipsDirectionsPlace peanut butter is small microwave-safe bowl. Microwave 10 seconds on HIGH. Mix in sugar using wooden spoon, until smooth. Stir in cereal and mix well to blend.Spray hands with nonstick cooking spray. Shape the mixture, pressing firmly, into 1-inch balls. Place balls on waxed paper-lined plate and freeze for 15 minutes.Spread cocoa powder on plate. Roll each ball in cocoa powder; place back onto wax-paper lined plate.Place chocolate chips in small resealable plastic bag. Microwave 10 seconds on HIGH. Knead bag. Repeat until chocolate is melted and smooth. Smooth melted chocolate into corner of bag. Snip 1/8 inch from corner. Drizzle chocolate back and forth over the chocolate drops. Allow chocolate to firm before serving. (Or refrigerate in airtight container up to 3 days). Makes 20 chocolate drops.* This recipe is Gluten-Free.
