1 (18.25 ounce) chocolate cake mix
3 (2.5 ounce) jars pureed baby food
3 eggs or ¾ cup egg substitutes
¾ cup warm water
2-3 teaspoons instant coffee
2 tablespoons vegetable oil
½ cup white chocolate chips
1 tablespoon milk
oven to 350 degrees. Lightly coat a Bundt pan with cooking spray and then dust
with flour. Set aside.
all cake ingredients in large bowl with electric mixer at high speed for 2
minutes. Pour into prepared pan. Bake for 40 minutes or until a toothpick
inserted in center comes out clean. Cool for 10 minutes. Invert onto serving
plate; cool completely.
prepare glaze, combine white chocolate chips and milk in small microwavable
bowl. Microwave at MEDIUM for 50 seconds; stir. Microwave at MEDIUM at
additional 30-second intervals until chips are completely melted; stir well
after each 30-second interval.
warm glaze over cooled cake. Let stand for 30 minutes. Makes 16 servings.
