Preheat oven to 350-degrees. Coat a 9x5-inch loaf pan with cooking spray.

- In mixing bowl, stir together 1½ cups sifted all-purpose flour, ½ cup sugar, 1 teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon salt, 1½ teaspoons ground cinnamon and ¼ teaspoon ground allspice.
- In another bowl mix together 1 slightly beaten egg or ¼ cup egg substitute, ½ cup water, 2 tablespoons vegetable oil, ½ teaspoon vanilla extract, 1½ cups finely shredded carrots, ¼ cup chopped pecans and ¼ cup golden raisins. Add these to the dry ingredient. Stir just to mix the ingredients – do not over stir. Pour into loaf pan, spreading out evenly. Bake in oven for 50 minutes or until toothpick inserted in center comes out clean.
- Remove from oven. Let cool 5 minutes in pan. Remove from pan and complete cooling on a wire rack before slicing.
