Beans, Tomato and Bell Pepper SaladIngredients1 medium yellow bell pepper, seeded1 pint cherry tomatoes1 tablespoon Mrs. Dash spicy seasoning blend2 tablespoons olive oil1 (15-ounce) can cannellini beans, drained and rinsed¼ cup flat-leaf parsley, mincedDirections
- Preheat oven to 375 degrees. Coat a roasting pan with vegetable oil spray.
- Cut bell pepper into thin strips and combine with tomatoes, Mrs. Dash seasoning and 1 tablespoon olive oil. Pour onto baking sheet.
- Roast vegetables for 25 minutes, stirring half way through. Remove from oven and place in bowl.
- Add beans, parsley and remaining oil. Toss and serve at room temperature. Makes 4 servings.
