Baked Pears over Spring Greens
Preheat oven to 400 degrees.
Makes 4 servings.
- Peel 2 pears, cut them in half and core. Place cut side up on a baking sheet. Sprinkle the top of each pear half with chopped walnuts. Spray the tops with vegetable cooking spray. Bake for 20 minutes or until the pears are tender.
- In a small bowl whisk together the dressing ingredients: ¼ cup raspberry vinegar, 2 tablespoons honey, ¼ teaspoon ground ginger, ¼ teaspoon ground cinnamon and 1/8 teaspoon crushed red pepper flakes.
- Before serving, place mixed greens on 4 individual salad plates. Spoon the dressing evenly over each salad. Place a warm pear half on each serving.
